Mediterranean Grilled Sweet Potatoes Recipe

Serve these loaded sweet potatoes as a hearty appetizer, vegetarian main dish or a fun side dish.

Ingredients

  • 1⁄3 cup prepared hummus
  • 1⁄3 cup Greek yogurt
  • 2-3 tsp. chili garlic sauce or harissa paste
  • 2 pounds sweet potatoes, peeled and cut into ½” rounds
  • 1 tbsp. avocado oil
  • 1 tsp. salt
  • 1 tsp. lemon zest
  • 1⁄2 tsp. garlic powder
  • 1⁄2 tsp. ground black pepper
  • 1⁄2 cup grape tomatoes, sliced
  • 1⁄2 cup English cucumber, seeded and chopped
  • 1⁄2 cup kalamata olives, sliced
  • 1⁄2 cup crumbled feta
  • 1⁄4 cup red onion, chopped

Directions

  1. Stir together hummus, yogurt and chili garlic sauce. Refrigerate until ready to serve.
  2. Heat grill to medium heat.
  3. Toss sweet potato rounds with oil, salt, lemon zest, garlic powder and pepper.
  4. Place on grill and cook 15-18 minutes, turning once, until tender and nicely marked.
  5. To serve, place sweet potatoes on a serving plate or platter. Top with tomatoes, cucumbers, olives, feta, onions and dollops of spicy hummus sauce.
  6. Refrigerate leftovers.
