Serve these loaded sweet potatoes as a hearty appetizer, vegetarian main dish or a fun side dish.
Ingredients
- 1⁄3 cup prepared hummus
- 1⁄3 cup Greek yogurt
- 2-3 tsp. chili garlic sauce or harissa paste
- 2 pounds sweet potatoes, peeled and cut into ½” rounds
- 1 tbsp. avocado oil
- 1 tsp. salt
- 1 tsp. lemon zest
- 1⁄2 tsp. garlic powder
- 1⁄2 tsp. ground black pepper
- 1⁄2 cup grape tomatoes, sliced
- 1⁄2 cup English cucumber, seeded and chopped
- 1⁄2 cup kalamata olives, sliced
- 1⁄2 cup crumbled feta
- 1⁄4 cup red onion, chopped
Directions
- Stir together hummus, yogurt and chili garlic sauce. Refrigerate until ready to serve.
- Heat grill to medium heat.
- Toss sweet potato rounds with oil, salt, lemon zest, garlic powder and pepper.
- Place on grill and cook 15-18 minutes, turning once, until tender and nicely marked.
- To serve, place sweet potatoes on a serving plate or platter. Top with tomatoes, cucumbers, olives, feta, onions and dollops of spicy hummus sauce.
- Refrigerate leftovers.
