How to make Feta Watermelon Salad
Ingredients:
Honey-Lime Dressing
- 2 tablespoons of honey
- 2 tablespoons of lime juice
- 1-2 tablespoons of extra virgin olive oil
- a pinch of salt
Watermelon Salad
- 1/2 of a peeled watermelon cut into cubes
- 1 English cucumber, cubed or sliced (about 2 cups)
- 15 fresh mint leaves, chopped
- 15 fresh basil leaves, chopped
- 1/2 cup crumbled feta cheese
Directions:
- Make the dressing- In a small bowl, whisk together all of the dressing ingredients and set aside.
- Make the Salad- In a larger bowl, combine the cubed watermelon, cucumber, and fresh herb leaves.
- Pour the dressing onto the larger bowl of watermelon, cucumber, and herbs and gently toss the mixture to evenly coat the salad. Add the feta cheese to the top of the salad and enjoy!
You are welcome to add some red onion, shallots, or some avocado if you like a little more variation or flavor.
