Homemade Toffee Recipe

Ingredients

  • 1 cup granulated sugar
  • 1 cup chopped pretzels (choose Glutino gluten free)
  • 1 cup unsalted vegan butter
  • 1/4 cup water
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup vegan chocolate chips

Optional: 2 tablespoons finely chopped pretzels + flaked sea salt for topping

Directions:

  1. Line a 9×9 inch baking dish with parchment paper then spread an even layer of chopped pretzels out and set aside.
  2. Combine the sugar, salt, water, and vegan butter in a heavy-bottomed pot.
  3. Place over medium heat, stirring occasionally. Once the mixture comes to a boil stir frequently until a candy thermometer reads 300° F . Remove from heat and stir in the vanilla.
  4. Immediately pour over the pretzels and spread to the edges with an offset spatula. Set aside for 2-3 minutes to cool slightly.
  5. Sprinkle chocolate chips over the surface then cover with foil for about 3-4 minutes and then smooth into a thin even layer.
  6. Top with a few tablespoons of finely chopped pretzels and some flaked sea salt if desired. Refrigerate for at least an hour to set then break or cut into serving pieces and enjoy.

Once cooled, layer cut bars between layers of parchment paper in an airtight container. Freeze for up to 3 months.
