How to make sweet potato burgers
Ingredients:
- 2 medium sweet potatoes (about 1 pound), peeled and cubed
- 1 can (15 ounces) black beans, drained and rinsed
- 1/2 cup breadcrumbs (or gluten-free breadcrumbs)
- 1/4 cup diced onion
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 large egg (or flax egg for vegan option)
- 2 tablespoons olive oil (for cooking)
- Burger buns and toppings (lettuce, avocado, tomato, sauce of choice)
Directions:
- In a large pot, bring water to a boil. Add the cubed sweet potatoes and cook until tender, about 10-15 minutes. Drain and let cool slightly.
