Shamrock Avocado Toast
This healthy St. Patrick’s Day breakfast recipe is so savory and cute! You’ll cook two eggs in green bell pepper “shamrocks” and serve them on avocado toast.
Ingredients:
- ½ tablespoon olive oil
- Green bell pepper
- 2 eggs
- 1 slice of bread, toasted
- 1 tiny avocado or ⅓ of a regular avocado
- pinch of salt and black pepper
- optional – pinch of red pepper flakes
Directions:
- Slice both ends off a bell pepper and remove and interior pith and seeds. Slice two ¼-inch rounds of pepper.
- Heat the olive oil in a large skillet over medium-high heat. Once the oil is hot, add the rings of bell pepper.
- Crack one egg into each bell pepper ring. Allow the egg to cook for 3 to 5 minutes or until the white is fully cooked.
- Meanwhile, cut the avocado and spread it onto the piece of toast.
- Place the pepper and egg rings onto the avocado toast.
- Top with a sprinkle of salt and pepper and optional red pepper flakes.
- Serve immediately.
Delicious Kale Smoothie
Green smoothies are a wonderful way to nourish your body, detox it, and ensure you’re getting all the nutrition you need. You don’t need to drink them only on St. Patrick’s Day.
Ingredients: 
- 1 cup kale
- 1 banana
- 1 tablespoon unsweetened peanut butter
- 1 tablespoon maple syrup or any other sweetener of your choice
- 1 tablespoon lemon juice
- 1 cup or 230 ml unsweetened almond milk or any other nut milk
- water or ice optional
- a pinch of sea salt
Directions:
Blend all the ingredients in a blender until smooth. Add a bit of ice or water to adjust the consistency and a pinch of salt to balance the taste. Enjoy!
