It’s filling and best of all it is low in calories. You will find that it is satisfying and will stick with you all morning. You will not find yourself hungry in a couple hours like you do with some other breakfast foods. And it is a great egg dish to make a larger batch and split them into two servings and reheat the rest in the microwave the next day.
How to make Broccoli Cheese Scrambled Eggs
Ingredients:
- 1 pasture-raised egg
- 1/2 cup organic egg whites
- 1 cup broccoli, chopped
- 1 slice organic American cheese, diced
- 1/2 tsp Paleo Valley Rosemary Garlic seasoning (or seasoning of your choice)
- 1 apple, cored and sliced
- 2 TBSP sauerkraut
- avocado oil spray
Directions:
- Heat a frying pan over medium-high heat and spray with avocado oil spray. Add broccoli and saute for a few minutes.
- Add whole egg, egg whites and seasoning in the pan and cook until eggs are solid.
- Fold in the American cheese and cook until slightly melted.
- Serve with a side of sauerkraut and your favorite fruit.

Yes! You may not have realized, but scrambled eggs are actually great for meal prep! You can reheat scrambled eggs in 30 second increments in a microwave in a covered dish. Scrambled eggs can be stored (in the fridge) and reheated up to 3 days.

Yes! If using other vegetables (popular additions include mushrooms and olives) be sure to sauté them first to prevent them from releasing moisture into the dish. Diced ham is a great protein source.
