How to make Avocado Toast

Ingredients

  • ½ small avocado
  • ½ teaspoon lemon juice
  • ⅛ teaspoon kosher salt
  • ⅛ teaspoon freshly ground black pepper
  • 1 slice whole-grain bread, toasted
  • ½ teaspoon extra-virgin olive oil
  • ¼ teaspoon flaky sea salt or crushed red pepper for garnish (optional)

Directions

  1. Combine ½ avocado, ½ teaspoon lemon juice, ⅛ teaspoon salt and pepper to taste in a small bowl. Gently mash with the back of a fork.
  2. Top 1 slice toasted bread with mashed avocado mixture. Drizzle with ½ teaspoon olive oil and sprinkle with flaky sea salt and/or crushed red pepper, if desired.

To make this avocado toast into a lunch add a few strips of bacon and top it off with an over easy fried egg or sliced hard boiled egg as a protein source!
