Feta Watermelon Salad Recipe

One of the easiest ways to add some extra water to your summer diet is eating watermelon. One cup of watermelon contains up to half a cup of water, has 5% of your daily vitamin A, 14% of your daily Vitamin C, and 14% of your daily Potassium. There are several nutrients in watermelon that may improve heart health, reduce inflammation, and may prevent macular degeneration. Try this watermelon salad recipe to add a nutritious, hydrating fruit to your summer dinner table.

Ingredients:

Honey-Lime Dressing

  • 2 tablespoons of honey
  • 2 tablespoons of lime juice
  • 1-2 tablespoons of extra virgin olive oil
  • a pinch of salt

Watermelon Salad

  • 1/2 of a peeled watermelon cut into cubes
  • 1 English cucumber, cubed or sliced (about 2 cups)
  • 15 fresh mint leaves, chopped
  • 15 fresh basil leaves, chopped
  • 1/2 cup crumbled feta cheese

Instructions:

  1. Make the dressing- In a small bowl, whisk together all of the dressing ingredients and set aside.
  2. Make the Salad- In a larger bowl, combine the cubed watermelon, cucumber, and fresh herb leaves.
  3. Pour the dressing onto the larger bowl of watermelon, cucumber, and herbs and gently toss the mixture to evenly coat the salad. Add the feta cheese to the top of the salad and enjoy!

You are welcome to add some red onion, shallots, or some avocado if you like a little more variation or flavor.
