Options:

A good salad recipe is always flexible, and this spring salad is no exception. Here are a few of our favorite ways to change it up:

  • Swap the cheese, or skip it. Use soft goat cheese or mini mozzarella balls instead of feta, or skip the cheese to make this  salad vegan.
  • Mix up the veggies. Use whatever looks good at the farmers market or grocery store! If you can’t find radishes, shaved kohlrabi or Japanese turnips would be a great substitute. I also like to make this spring pea salad with blanched sugar snaps or green beans.
  • Try adding nut or seeds. Toasted almonds, walnuts, sunflower seeds or pepitas would be a fantastic addition, adding a little crunch.
