How to make Spicy Asian Zucchini

Ingredients:

  • 2 medium zucchinis, sliced into rounds or half-moons
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon chili flakes or 1 tablespoon Sriracha (adjust to taste)
  • 1 teaspoon honey or sugar (optional, for sweetness)
  • 1 tablespoon sesame seeds (optional, for garnish)
  • 2 tablespoons green onions, sliced (optional, for garnish)

Directions

  1. Prepare the sauce: In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, chili flakes or Sriracha, and honey or sugar (if using). Set aside.
  2. Sauté the zucchini: Heat the vegetable oil in a large skillet over medium-high heat. Add the sliced zucchini and stir-fry for 3-4 minutes, until the zucchini is tender but still crisp.
  3. Add the garlic and ginger: Stir in the minced garlic and ginger, cooking for another minute until fragrant.
  4. Coat with sauce: Pour the sauce over the zucchini and toss to coat. Cook for an additional 1-2 minutes, allowing the sauce to thicken slightly and glaze the zucchini.
  5. Serve: Remove from heat and garnish with sesame seeds and sliced green onions if desired. Serve immediately as a side dish with rice, noodles, or your favorite protein.
