Ingredients
- 2-pound boneless pork loin roast
- 3 medium apples, sliced Honeycrisp Apples
- ¼ cup honey (optional)
- 1 red onion, halved and sliced
- 1 tablespoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground nutmeg
- 1 cup chicken stock
- 1 tablespoon olive oil
- sea salt, to taste
- freshly ground pepper, to taste
Directions
- Prepare the pork loin: Pat the pork loin roast dry with paper towels. In a small bowl, combine olive oil, black pepper, 1/2 teaspoon ground ginger, 1/2 teaspoon ground nutmeg, and 1/2 teaspoon ground cinnamon. Rub this mixture all over the pork loin, ensuring it’s evenly coated.
