Shiitake Mushroom and Spinach Stir-Fry

mushroom and spinach

Get ready to transform basic veggies into a flavor bomb. Grab your wok and let’s create magic in minutes—this stir-fry delivers restaurant-quality results with zero fuss. Adding fresh shiitake mushrooms brings an earthy umami flavor to a stir-fry recipe. Unbelievably savory mushrooms soak up that glossy sauce while wilted spinach adds vibrant color. The texture stays perfectly crisp-tender—serve it over steaming jasmine rice or toss with udon noodles for the ultimate weeknight upgrade.

Why Shiitake Mushrooms Belong in a Stir Fry

Stir fry cooking works by using very high heat for a very short time. The goal is browning and caramelization, not steaming. Mushrooms that contain a lot of water tend to release that liquid in the pan, which lowers the temperature and causes everything to steam instead of fry. This is why you end up with sad, soggy stir fry sometimes.

How to make Stir-Fry with Shiitake Mushroom

Ingredients

For the stir-fry base:

  • 1 lb fresh shiitake mushrooms, stems removed and sliced
  • 6 cups fresh spinach leaves
  • 2 tbsp vegetable oil
  • 4 cloves garlic, minced

For the sauce:

  • 3 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp cornstarch
  • 1/4 cup water

Directions

  1. Heat vegetable oil in a large wok or skillet over medium-high heat until shimmering.
  2. Add sliced shiitake mushrooms and cook for 5-7 minutes, stirring frequently, until they release their liquid and edges turn golden brown.
  3. Push mushrooms to one side and add minced garlic to the empty space, cooking for 30 seconds until fragrant but not burned.
  4. Combine mushrooms and garlic, then add fresh spinach in batches, wilting each addition before adding more.
  5. Whisk together soy sauce, rice vinegar, sesame oil, cornstarch, and water in a small bowl until smooth.
  6. Pour sauce mixture over the vegetables and stir constantly for 1-2 minutes until the sauce thickens and coats everything evenly.
  7. Remove from heat immediately once the sauce reaches a glossy, thickened consistency.

The stir fry does not wait. Eat it right away. Leftovers are fine reheated in a pan, but the spinach will soften overnight, and you lose the crispness that makes the dish so satisfying fresh.
