Seafood Stuffed Mushrooms

These seafood stuffed mushrooms are the ultimate small bite for any party. They’re cheesy and filled with seafood. We were slightly concerned about the lack of seasoning. But the shallots, mozzarella cheese, and seasoned bread crumbs add the right amount of seasoning to let the seafood flavor shine.

Whatever variety of mushrooms you choose, I would recommend using small ones. These seafood stuffed mushrooms are best when you can pop them in your mouth like bite-sized treats.

How to make Seafood Stuffed Mushrooms

Ingredients

  • 3 packages stuffing mushrooms (approximately 10 in each package)
  • 1 tablespoon olive oil
  • 1/2 stick butter, melted
  • 2 – shallots, chopped
  • 1 pound small cooked shrimp
  • 1 package imitation crab meat
  • 4 cups shredded mozzarella cheese
  • 2 large eggs
  • 1/3 cup seasoned gluten-free panko bread crumbs

Directions

  1. Preheat oven to 350 degrees F. Wash mushrooms and remove stems. Trim around the circle where the stem was to open it up a bit more. Place on a baking sheet.
  2. Drizzle with a mixture of olive oil and half of the melted butter.
  3. Bake mushrooms in the oven at 350 degrees for 10 minutes. Drain off mushrooms and then set aside.
  4. Meanwhile, saute shallots until nice and caramelized.
  5. Dice the shrimp and crab meat into smaller pieces.
  6. Mix shallots, shrimp, crab meat, cheese, egg, and bread crumbs.
  7. Stuff mushrooms with a heaping scoop of mixture.
  8. Drizzle with remaining melted butter.
  9. Bake at 350 degrees for approximately 20 minutes or until nice and browned.

Recipe Tips, Tricks, and Modifications

When making stuffed mushrooms there are a couple things to keep in mind. And this applies to this recipe and any other stuffed mushroom recipe.

  • Make sure all the ingredients in the stuffing are cut to be about the same size. It is much easier to eat and the flavors are more uniform if everything is cut the same size and is cut fairly small. This recipe is super easy and does not require chopping but if you cannot find minced clams you will want to chop the canned clams.
  • Broil for 1-2 minutes once they are done cooking. I love to give my stuffed mushrooms a minute or two under the broiler to nicely brown the top of them. I like the extra flavor and appearance.
