Ingredients:

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 1/2 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup milk

Directions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper for easy removal.
  2. Mix Dry Ingredients: In a medium mixing bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and cloves until well combined. Set aside.
  3. Combine Wet Ingredients: In a large mixing bowl, beat together the pumpkin puree, vegetable oil, granulated sugar, brown sugar, eggs, vanilla extract, and milk until smooth and well combined.
  4. Combine Wet and Dry Mixtures: Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Be careful not to overmix; the batter should be thick and slightly lumpy.
  5. Pour into Pan: Pour the batter into the prepared loaf pan, spreading it out evenly.
  6. Bake: Place the pan in the preheated oven and bake for 55-65 minutes, or until a toothpick inserted into the center of the bread comes out clean. If the top of the bread starts to brown too quickly, cover it loosely with aluminum foil.
  7. Cool: Remove the bread from the oven and allow it to cool in the pan for about 10 minutes. Then transfer the bread to a wire rack to cool completely. Slicing the loaf before it has cooled will result in crumbly, torn slices.
