How to make Mediterranean Grilled Sweet Potatoes

Ingredients

  • 1⁄3 cup prepared hummus
  • 1⁄3 cup Greek yogurt
  • 2-3 tsp. chili garlic sauce or harissa paste
  • 2 pounds sweet potatoes, peeled and cut into ½” rounds
  • 1 tbsp. avocado oil
  • 1 tsp. salt
  • 1 tsp. lemon zest
  • 1⁄2 tsp. garlic powder
  • 1⁄2 tsp. ground black pepper
  • 1⁄2 cup grape tomatoes, sliced
  • 1⁄2 cup English cucumber, seeded and chopped
  • 1⁄2 cup kalamata olives, sliced
  • 1⁄2 cup crumbled feta
  • 1⁄4 cup red onion, chopped

Directions

  1. Stir together hummus, yogurt and chili garlic sauce. Refrigerate until ready to serve.
  2. Heat grill to medium heat.
  3. Toss sweet potato rounds with oil, salt, lemon zest, garlic powder and pepper.
  4. Place on grill and cook 15-18 minutes, turning once, until tender and nicely marked.
  5. To serve, place sweet potatoes on a serving plate or platter. Top with tomatoes, cucumbers, olives, feta, onions and dollops of spicy hummus sauce.
  6. Refrigerate leftovers.

Option- Try this Garlic Herb Sauce

Ingredients

  • 1/8 cup tahini
  • ¼ cup chickpeas
  • juice of 1/2 lemon
  • 3/4 – 1 tsp dried dill or sub 2-3 tsp fresh
  • 1 clove garlic minced
  • water or unsweetened almond milk to thin
  • optional: sea salt to taste

Directions:

  • While the sweet potatoes are grilling, prepare your garlic herb sauce by adding all ingredients to a mixing bowl and whisking to combine, only adding enough water to almond milk to thin it so it’s pourable. Taste and adjust seasonings as needed. Add more garlic for more zing, salt for a more savory flavor, lemon juice for freshness, and dill for a more intense herb flavor.
