Healthy Green Bean Casserole

One of the easiest ways to make a dish healthier and lower the calorie count is to eliminate ingredients that come from a can. Any Thanksgiving dish that requires canned ingredients contains lots of extra sodium and sugar. Try out this Green Bean Casserole that contains no canned ingredients!

Ingredients

  • 2 medium to large yellow onions, thinly sliced
  • 1 tablespoon olive oil
  • 1/2 cup all-purpose flour
  • 1/2 cup panko breadcrumbs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 2 pounds fresh green beans, trimmed
  • 2 tablespoons butter, divided
  • 1 pound (16 ounces) sliced baby Bella mushrooms
  • 1 teaspoon fresh thyme
  • Salt and pepper
  • 2 tablespoons butter
  • 1/3 cup all-purpose flour
  • 2 cups low sodium chicken or vegetable broth
  • 3 cloves garlic, minced
  • 1/2 cup grated parmesan cheese
  • Freshly ground salt and pepper, to taste

Instructions

  1. Preheat oven to 425 degrees Fahrenheit. Line a large baking sheet with parchment paper and nonstick cooking spray. Set it aside.
  2. Place sliced onions in a large bowl, drizzle with 1 tablespoon of olive oil then add in flour, panko breadcrumbs, garlic powder and salt. Use your hands to toss to combine, then place onions onto prepared baking sheet and bake for 15-25 minutes, use a tong or fork to flip the onions every 8 -10 minutes to make onions crispy on all sides.
  3. Once done cooking, set onions aside. Reduce the heat in the oven to 350 degrees Fahrenheit.
  4. While the onions cook, bring a large pot of salted water to a boil. Add green beans in and cook for about 2-3 minutes. then drain.
  5. Next cook your mushrooms: Place a large skillet over medium to high heat and add in 2 tbsp. of butter. Once butter melts, add in the mushrooms, fresh thyme and salt and pepper. Cook mushrooms, stirring occasionally until mushrooms are golden brown, about 4-6 minutes. Transfer to a bowl.
  6. In the mushroom pan add 2 tbsp. of butter and place over medium heat. Once the butter melts, whisk in flour and cook for 15-30 seconds until a paste forms, then gradually add 2 cups of broth while whisking vigorously to avoid lumps.
  7. Once smooth, increase heat, and bring mixture to a boil. Then, reduce heat and simmer for 5 minutes, stirring every so often, until the sauce thickens.
  8. Once thick, turn off the heat and stir in minced garlic and parmesan cheese. Season with salt and pepper to taste.
  9. Spray a 9×13 inch baking pan with nonstick cooking spray. Add in green beans, mushrooms and ¼ of the crispy onions. Gently toss.
  10. Pour the sauce over the mixture, then cover with foil and bake for 25-30 minutes. Remove foil, add the remaining crispy onions on top and bake for 5-10 minutes.
  11. Enjoy your delicious version of green bean casserole!
