Crock Pot Honey Chicken and Rice

Comfort food just got a whole lot easier with this Crockpot chicken and rice!

This is an easy and delicious Crock Pot chicken recipe. It is a fantastic slow cooker meal your family will love. Use the cut of chicken you prefer. We opted for boneless and skinless chicken thighs. The chicken cooks in a sauce made of soy sauce, honey, ketchup, and seasonings. It’s sweet and savory. Initially, the sauce is thin, so we suggest using the corn starch mixture if you prefer a thicker sauce. Delicious served over rice with a vegetable on the side.

This is a complete meal in one pot, perfect for busy weeknights or lazy weekends. I promise you’ll love it as much as we do.

How To Make crock pot honey chicken and rice

Ingredients

  • 2 pounds boneless chicken
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup honey
  • 1/4 cup soy sauce
  • 1/8 cup chopped onion
  • 1/8 cup ketchup
  • 1 tablespoon vegetable oil
  • 1 clove garlic, minced
  • 1/4 teaspoon red pepper flakes
  • 2 tablespoons corn starch
  • 1/4 cup water

Directions

  1. Season both sides of the chicken with salt and pepper. Put it into the Crock Pot. Combine honey, soy sauce, onion, ketchup, oil, garlic, and pepper flakes.
  2. In a small bowl, combine honey, soy sauce, onion, ketchup, oil, garlic, and pepper flakes.
  3. Pour over the chicken.
  4. Cook on high for 2 – 3 hours or on low for 4 – 5 hours.
  5. Once the chicken is cooked, remove it and cut into bite-sized pieces. Whisk 2 Tbsp of corn starch with 1/4 cup of water to thicken the sauce.
  6. Pour the mixture into the Crock Pot and whisk together.
  7. Add the chicken back to the Crock Pot. Place the lid back on and cook on high for 30 – 45 minutes or until the sauce is thickened. Once the sauce is thickened, serve chicken and sauce over the rice of your choice.

Note: We used boneless skinless chicken thighs. With honey in this, it will burn around the edges. To avoid this using a liner will help or stir around the edges every hour.
