How to make these Cinnamon Rolls
Roll Ingredients
- 2 cups Bob’s Red Mill gluten free 1 to 1 baking flour (plus extra for rolling dough)
- 2 Tablespoons psyllium husk
- 1 Tablespoon nutritional yeast
- 2 teaspoons baking soda
- 1 teaspoon fine sea salt
- 2 eggs
- 1 can full-fat coconut milk with guar (best if coconut fat is floating/solid)
- 1 Tablespoon apple cider vinegar
Sweet Cinnamon Sauce Ingredients
- ½ cup dairy-free butter (OR combine 1/2 cup coconut oil, a pinch of nutritional yeast, and a few drops of apple cider vinegar)
- ¼ teaspoon stevia glycerite
- 1 Tablespoon cinnamon
- ½ teaspoon salt
- a few drops of vanilla extract
Directions
- Preheat oven to 350℉. Place coconut-oil greased 10” skillet in oven.
- Combine dry roll ingredients: flour, psyllium husk, nutritional yeast, baking powder, salt.
- Whisk wet roll ingredients: whisk eggs with liquid from canned coconut milk – if the fat is separated, set it aside. Then whisk in apple cider vinegar.
- Mix wet roll ingredients into dry roll ingredients, then coarsely mix in reserved coconut milk fat. Cover dough and put in fridge to chill.
- Combine all the Sweet Cinnamon Sauce ingredients until smooth (but not liquid).
- Remove dough from fridge, and divide into 8 equal portions. Flour your surface, and shape portions into thick ropes 10-12 inches long.
- Spread Sweet Cinnamon Sauce along one side of each rope, then roll into a cinnamon roll shape, and place in hot skillet & pour or dollop the remaining Sweet Cinnamon Sauce over the buns.
- Bake at 350℉ for 20 minutes, then turn oven up to 425℉ for 15 minutes.
- Remove from oven and indulge!
These cinnamon rolls store well in an airtight container for several days, if you don’t eat them all up right away!
